pizza crust…try it
Pizza Pie (my Aunt and Grandma’s recipe)
Makes two pies:
4 c. unsifted, unbleached all-purpose flour 2 t. salt
1 t. sugar (granulated, white) ½ c. cooking oil (vegetable)
1 ½ c. hot water 1 cake compressed yeast (= 2 ¼ t.= .6 oz)
- Put flour into a large bowl and make a well in the center
- Add salt, sugar and oil
- Have water hot enough it will dissolve yeast
- Add water and then yeast
- Mix together in bowl
- Knead with hands thoroughly until dough does not stick to your hands
- Dough will be smooth now
- Put in bowl and spread softened butter over entire top surface
- Cover with a towel and let rise 2 hours (warm room is ideal with a covered bowl….dough must remain warm throughout kneading and rising process….)
- When risen, punch down and separate into two balls
- Let rise, covered, one more hour
- After second rising, roll out ball to ¼ inch thickness (or, if you prefer, ½ inch…my grandma and aunt always fought over this…..)
- Sprinkle corn meal onto pizza tray (or cookie tray….any flat surface will do)
- Place rolled dough onto tray
- Rub olive oil all over dough…cover entire surface….
- Add toppings ( start with cheese…sliced mozzarella…tomatoes/sauce…grated cheese….oregano…garlic…anything you like, really….)
- Bake in pre-heated oven 20 minutes at 450 F.(again, my aunt and grandma argued over this, as well…..my aunt baked it for 30 mins at 375…….this would be the ½ inch pie…..)
