Nut Cake (my mom’s favorite cake!!!!!!)
Nut Cake (my mom’s favorite!!!!!)
6 eggs…separarated 2 c. granulated sugar
2 c. all-purpose flour (cake flour works very well) 1 c. ground walnuts(almost
as fine as flour)
1 c. orange juice
4. t. baking powder
- Preheat oven to 350
- Grease and flour three 9” cake pans
- Beat egg yolks until lemony in color
- Gradually add sugar to beaten yolks….mix…add some more…etc
- Add baking powder to flour in a separate bowl….stir
- Alternate adding flour and orange juice to yolks/sugar mixture…..mix thoroughly…..start and end with flour
- Add walnuts and mix well
- Beat egg whites (you do not want them stiff!!!) and FOLD into batter
- Pour into cake pans and bake for 30 mins….start checking with toothpick at 20 minutes……
10. Remove and allow to cool thoroughly and completely….
11. Now on to the icing and filling
Filling (make a double batch of filling…gonna need it)
½ lb sweet butter ½ lb confectioner’s sugar
1 egg yolk 1 t. vanilla
- cream butter til light and fluffy
- add sugar, egg yolk and vanilla……..
- beat until creamy……..spread between layers of cooled cakes
icing
use filling recipe again…double it again…and then add
a little whole milk no more than 2 t. powdered cocoa
finish cake with icing….ready to eat
